Lisa's Oat Bread- WW Friendly Recipe
I adapted the original Grace's Oat Bread recipe to make a loaf that suits my personal taste and texture preferences. This oat bread is WW friendly, especially if you have oats, eggs, and non-fat Greek yogurt as your zero-point foods. I thought the original recipe had too much yogurt in it for my liking. I've dabbled in making gluten-free bread since I have Celiac disease and knew that xanthan gum is needed in gluten-free recipes since there is no gluten. So I started adding xanthan gum to the original recipe and liked the results. (This recipe is gluten-free if you use gluten-free oats.) Since eggs are free for me on WW Personal Points, I played around with the ingredients by using less yogurt and more eggs. I also whipped the egg whites during my experiments to see if that would make a lighter loaf, but in my opinion, it didn't really help. So I no longer do that step.
Ingredients
4 cups of rolled oats
2 teaspoons of baking powder
1/2 teaspoon of salt
1 teaspoon of xanthan gum
2 eggs
1 cup of non-fat plain Greek yogurt
Everything But The Bagel Seasoning (optional)
1) Preheat oven to 350° F
2) Mix dry ingredients in a large bowl.
3) Add eggs and yogurt and mix thoroughly, working the wet ingredients into the dry ingredients.
4) When the mixture is totally mixed and it's holding together, press the mixture into a greased loaf pan. I use cooking spray. Make sure the edges are pressed down to avoid excessive browning. Sprinkle with the Everything Seasoning.
5) Place in the oven on the middle rack and bake for 40 minutes or until brown around the edges.
6) Turn the loaf out on a cooling rack and let cool completely before slicing. Slice into 16 pieces about 1/4" thick.
7) Keep refrigerated and your loaf will last about 5 days or so.

I always loved this blouse! I tried to photograph it to show how it wraps. You feed the long tie through the hole in the opposite side of the blouse, then bring it around the back and then tie on the side. Made by Lane Bryant, it is a beautiful burgundy, gold and purple stripe. Cute pinched sleeve button closures. 55% cotton, 30% nylon, 11% rayon and 4% spandex. See more pics in my Poshmark closet.

Weight Watchers Recipe Revamp!

Today's recipe conversion is a recipe from the Weight Watchers What To Eat Now cookbook. The old recipe was six servings at 6 points per serving. With the new Freestyle Points, it is now only 1 point per serving! What a difference!!

Ingredients
- 2tspcanola oil33 Points
- 16ozchicken breast, grilled, skinless, boneless, 1" pieces00 Points

- 2medium clove(s)garlic clove(s), minced00 Points

- 2tspground cumin00 Points
- 15 1⁄2ozcanned black beans, rinsed and drained00 Points
- 14 1⁄2ozKroger Tomatoes, Diced, with Green Chilies, Original00 Points
- 8ozcanned tomato sauce00 Points
- 3⁄4cup(s)cooked frozen yellow corn00 Points
- 1⁄2cup(s)reduced sodium canned chicken broth00 Points
Instructions
- Heat oil in large saucepan over medium-high heat. Add chicken and cook, stirring often, until lightly browned, about 5 minutes.
- Add onion and bell pepper and cook, stirring often, until vegetables are softened, about 5 minutes. Add garlic, chili powder, and cumin and cook, stirring constantly, until fragrant, 30 seconds.
- Stir in black beans, tomatoes, tomato sauce, corn, and chicken broth; bring to a boil. Reduce heat and simmer, partially covered, until chili is slightly thickened, about 20 minutes. Ladle into 6 bowls, sprinkle with cilantro and scallions if desired.

Ipsy Makeup Subscription May 2017 ~ Initial Thoughts w/ Price Breakdown
My favorite item from this bag is the Luxie 660 Dreamcatcher Foundation Brush valued at $23.00. I am a sucker for colorful handles on my makeup brushes and this lavender or periwinkle blue color is such a cheerful addition to my collection. Luxie brushes are becoming my favorite brand and it is good to know that they are cruelty free. The brush is soft and tapered, which I can see being great for foundation. I love my paddle brush for foundation though, so I may wind up using this one for setting powder under my eyes. Lip balm is something I hoard, as I can't stand to be without any nearby. I do tire of the drugstore options, so this one by KVoss in Macaroon is a very welcome addition. It is chock full of coconut oil, almond oil, olive oil and macaroon essential oil. My only disappointment is that it doesn't taste or smell like coconut as I thought it might, but that isn't a deal breaker for me. It feels great on my lips and adds a soft sheen. A new brand to me, the Mellow Matte Lipstick is perfect in the color nude. It has a pink tone to it, which I really like. I don't like matte lipsticks as they usually make my lips too dry and I can't stand it. However, this one feels like there is nothing there. It is described as being a long wearing lipstick, which I agree, but there is some transfer if that is a concern of yours. Ipsy knows I love body lotion and I am glad to get another one to try. Hempz is a new brand to me and I am impressed so far! The Pomegranate Herbal lotion is not greasy or sticky . It absorbs quickly, leaving my skin soft and moisturized. The scent is subtle and fruity and while it's not the best thing I have ever smelled, it is pleasant to use. Urban Decay is another brand that I have been wanting to try, so I was excited to see a sample of this highlighter in my bag. I love highlighters anyway and this champagne gold with the name Sin is beautiful. It sheered out nicely and was definitely buildable when more layers were added.
